Sun in Winter Citra Pale

When Citra hops arrived on the scene their fruity, floral flavor and aroma quickly became a favorite of mine. This recipe uses Citra as the primary flavor, with a little Amarillo to back it up. These days I lean toward any beer that has a ABV in the 4% range but most Citra (or any) pales are not. I designed this recipe to be light in flavor, with a simple set of  ingredients so it’s easy to prepare. 

Batch size:
3 gallons

Steeping Grains:

3 lbs Amber DME

.15 oz Citra 12.8% AA @ 60
.10 oz Amarillo 8.3% AA @ 60
.15 oz Citra 12.8% AA @ 20
.10 oz Citra 12.8% AA @ 0

Wyeast American Ale 1056


OG: 1.042
FG: 1.011
ABV: 4.13%
IBU: 41
SRM: 7

What to Do:

Being 2.5 gallons of water to a boil, then remove from heat and stir in the malt. Return to heat and when wort is at boil again add hops according to the schedule. With 10 minutes to go add Irish moss.

Ferment at 65F until wort reaches final gravity, the rack to secondary.
