Revisiting Raspberry Wit

I managed to squeeze in a brewing session during this past holiday weekend and I wanted to make something light for the late days of summer. McMenamins Ruby is the first beer I think of when I picture having a beer in the hot summer sun and this recipe is the second attempt in my ongoing effort to brew a beer similar to that one.

For this batch I am lowering the amount of raspberries from three pounds to one. In the first batch I thought the berry flavor was overpowering.

Raspberry Wit

Batch Size
5 gallons

Steeping Grains
4 ozs flaked rice

Malt
6 lbs. Pilsen DME
6 lbs. Wheat DME

Hops
1.25 ozs Saaz hops @ 60 mins.
0.5 Saaz hops @ 5 mins.

Adjuncts
1 Campden tablet
1 tsp. Irish moss @ 10 mins.
0.5 ozs bitter orange peel @ 5 mins.
0.5 ozs sweet orange peel @ 5 mins.
0.5 ozs crushed coriander @ 5 mins.
Juice from 1 lb raspberries added to secondary

Yeast
WYeast 3944 Belgian Wit

FG: 1.010
ABV: 5.2%
SRM: 5
IBU: 4
